Rich dates give away the sherry finish, Werther's Originals, leather, liquorice and tobacco
Crushed walnuts, followed by a malty Guinness-like hue, falling into a sweeter end note of caramel and honey
A rich warming finish that stick to your gums, dark chocolate and honey
Highland Single Malt 11: Pedro Ximénez Quarter Cask
The third release by Glaschu Spirits Co, an un-named highland spirit... what ever could it be? 🤔
Thankfully, we know exactly where it's been distilled, right at the border of the Scottish highland and lowland whisky regions... at the foot of Dumgoyne!
It's an 11 year old (almost 12 actually, but we're a bit impatient) ex-bourbon single cask, that we split into two first-fill Pedro Ximénez quarter casks.
We let those two quarters ripen for a whole 8 months before vatting them back together for this release. The colour change from start to finish has been incredible, the flavour transformation even more so!
Distillery: Highland Single Malt
Bottled: Natural colour and without chill filtration
Bottle Size: 700 ml
